After careful selection as soon as they reach the winery, the grapes are lightly pressed with a pneumatic press. Part of the juice comes from from bleeding, particularly with the Grenache that dominates this blend. Cold settling overnight leads to fermentation in stainless at low temperature (16 – 18°C). Malolactic fermentation is avoided to maximize freshness of fruit. Maturation on fine lees with regular stirring in stainless steel vats for 6 months, and then bottling in March/April following the harvest.
Color: Vibrant grenadine with purple hues.
Nose: Subtle aromas of summer fruits and red berries.
Palate: A fresh and fruity wine with strawberry and red fruits notes. The balance between a nice fat and a nice liveliness is perfect. Notes of citrus fruits, sweet almond and red cherry on the finale.
